Wilted Lettuce with Hot Bacon Dressing

Wilted lettuce was my daddy’s favorite salad. He was definitely one who believed adding bacon make everything better. In this case, adding more bacon makes wilted lettuce even better! We ate this as a side dish in the summer at least once a week and it is one of my family’s favorites, too.

The bacon dressing is very similar to the dressing on German potato salad – bacon, the drippings, sugar, cider vinegar, and a little water to balance the flavors. It’s that simple! And it’s so very yummy.

Butter lettuce or leaf lettuce are my favorites to use, but spinach is another good option. The dressing may disguise the spinach enough that pickier eaters will gobble it up!

A warm salad with sweet and sour flavors and crumbled bacon. Add grilled vegetables to create a more filling meal.

Ingredients

  • 6 slices bacon

  • ¼ cup sugar

  • ¼ cup cider vinegar

  • ¼ cup water

  • 2 teaspoons cornstarch

  • 4 cups about 10 ounces torn leaf lettuce

  • 2 hard-boiled eggs sliced

Directions

  • Place the bacon in a cold 10-12-inch skillet. The bacon slices should be close to each other, but not overlapping. Place the skillet over low-medium heat and cook until the fat begins to render then turn the heat up to medium and continue cooking until the bacon is crispy. This will take about 8-12 minutes. Flip the bacon half-way through the cooking process to crisp both sides. Transfer the crisp bacon to a sheet pan lined with a baking rack and set aside. This will allow the bacon to cool without getting soggy.  
  • Reduce the heat to low. To the bacon drippings, add the sugar and cider vinegar and whisk until well combined. In a separate bowl, whisk together the water and cornstarch to make a slurry. Slowly add this to the skillet, whisking continually. As the liquid simmers, it will become slightly thicker. The dressing is done once it lightly coats the back of a spoon.
  • Place the lettuce in a large serving bowl and add the hot dressing then toss until the lettuce is coated. The lettuce will wilt slightly from the heat of the dressing. Crumble the cooked bacon on top then add the sliced eggs. Serve warm.
