Cabbage Fritters
I love this recipe because I can hide veggies and Noodle won’t even know it! You can easily swap the cabbage for any other leafy green you like, too. I took this recipe (with permission) from the Good Food: Local cookbook. Check out the Good Food: Local website!
Ingredients:
- 1/4 of a head of cabbage
- 2 Tablespoons chopped green onions
- 1 cup self-rising flour
- 1 cup creamed corn
- 2 eggs
- 1/2 cup milk
- Salt and pepper to taste
Directions
Chop the cabbage and green onions into very small pieces. Use your food processor or blender. In a large bowl, whisk the eggs and add all the other ingredients. Mix the ingredients well and let this stand for about 30 minutes. The cabbage will soften a little and the flour will expand slightly. Fry in a couple Tablespoons of olive oil or on an oiled griddle for approximately 4 minutes on each side. Sprinkle with salt and pepper while they are hot.
