Holiday Cookie Swap

I survived hosting my first holiday cookie swap!

Whew … it was a whirlwind of getting the house cleaned up, decorations put up, and cookies baked. Oh, who am I kidding … I barely got the Christmas tree decorated in time!

Such is the life of busy women eherywhere, which is why coming together for something like a cookie swap is important. For a couple of hours, a group of 15 women were able to enjoy each other’s company, drink a little eggnog, and eat cookies. It doesn’t get much better than that!

Except maybe getting to take cookies home with you!

We had all sorts of treats from family recipes to a few from a local bakery. We didn’t care … anything goes. Peanut butter fudge, chocolate “no-bakes”, ice cream sandwiches, marshmallow wreaths, and old-fashioned spritz cookies were just a few that graced the table.

We had enough to nibble on and enough for everyone to take home nearly 2 dozen cookies at the end of the party. It was a lot of fun to see … and eat … what everyone brought. We each explained where our recipes originated, too. Many were food blog finds, while others were family recipes that had been handed down through generations.

Chocolate Peanut Butter No-Bakes

My mom used to make these no-bake cookies all the time and they are my absolute favorite. I can’t bake … at least not very well … so I rely on easy dessert recipes! These are super simple. If I can make them, so can you!

Peanut Butter No-Bake Cookies

Ingredients

  • 2 cups sugar

  • 1/2 cup milk

  • 1 stick unsalted butter

  • 1/4 cup cocoa powder

  • 3 cups rolled oats

  • 1 cup creamy peanut butter

  • 1 tablespoon vanilla

  • 1/8 teaspoon salt

Directions

  • Place the sugar, milk, butter and cocoa powder in a saucepan over medium heat. Bring to a boil, stirring occasionally. Let the mixture boil for 1 minute then remove the pan from the heat. Stir in the oats, peanut butter, vanilla, and salt. Using a small scoop, scoop cookies onto wax paper lined baking sheets. Let these sit at room temperature for 30 minutes or until cooled.

Notes

  • This recipe makes 3-4 dozen small cookies.
