Friday Food Finds

Easter is around the corner … literally.

Now, I’m an only child, but I’m fortunate to have women in my life who are close enough they might as well be sisters … my friends Stephanie and Amber are certainly among the handful! So, Aunt Stephanie and Aunt Amber came over Wednesday night to help me and Noodle dye easter eggs.  Aunt Stephanie even brought us farm eggs! We have 2 dozen minus the 2 that Noodle “accidentally” cracked and ate 🙂

With that many Easter eggs and only a few people around the Easter dinner table, we’ll have plenty left over … even though MPG can nearly eat his weight in deviled eggs!

Here’s what to do if you’re in my Easter shoes!

Avocado Egg Salad

I love egg salad but this avocado egg salad version will definitely shake things up a bit … and add a punch of good stuff!

And the Eggs Have It!

The DIY Maven on Curbly has a great roundup of ways to use leftover Easter Eggs, but these atop tomatoes and English muffins just look too yummy to pass up!

Too Cute!

These are just too cute to pass up! These Party Chicks are great for anyone, but kids will be giddy over them!

Let’s Get Pickled!

Oh … these … are pink! And I love them! I’m not sure if it’s the pickled part or the beet part … or the combination!  David Leite has a great food site. Make sure you check out the recipe for these pickled eggs … it’s so easy!

I hope I have enough Easter eggs left to try some of these.  Of course, I can always hard boil more, but that’s not as much fun!

Happy Easter!
